Tomato Chutney

This is tok-jhaal-mishti or sour-hot-sweet chutney.
Heat oil in a pan. Add bayleaf, and panch phoron – sauf, black jeera, mustard seeds, jeera, dry red chilli, and methi seeds. Fry for sometime.
Then add tomatoes, sugar, turmeric, sugar and salt. You can also add dates.
