Gajar ka Halwa – Carrot Pudding

This is a bit liquidy because it tastes good with roti.
Ingredients: Red carrots, full fat milk, dry fruits, date jaggery
Procedure:
a) Grate the carrots b) No need to squeeze the juice out of it, just leave it aside c) Add ghee to kadai, add elaichi and then dry fruits, fry and keep the it aside d) Add the grated carrots, cook till the carrot becomes a bit soft but the carrot should not turn brown e) Add 3 times full fat/cream milk to it, reduce the gas and allow it to cook f) Stir the mixture frequently to avoid the mixture from sticking to the bottom of the pan.
When the mixture has become thick, switch off the gas and garnish the pudding with fried dry fruits. Eat it hot or keep it the fridge and eat it later.
We like it a bit liquidy to eat with paratha or purri.
