Mutton masala: This is cooked in a lot of oil and fried until the entire stuff turns brown and separates from oil. This is cooked with a lot of patience and spices to give that shop type flavour. It is better to boil the mutton for sometime in water with mutton masala.

Here we go:

Add oil in pan. Then, bayleaf and whole garam masala. Then add ginger, garlic, and onion paste. When the oil separates, add mutton pieces and cook till the mutton is partially cooked.

Then add a little curd, turmeric, salt, red chilli powder and a spoon of sugar and cook for sometime. Then add little water and mutton masala powder. We add our home made masala powder.

Cook till the mutton is wholly cooked and has less gravy in it. Finally add some lemon juice.
