What are your biggest challenges?

I am a foodie, so my challenges are around my kitchen. The challenge I face in bringing the desired colour to food makes me tired and disappointed at times after my whole hearted effort.

I dont believe in using food colour, so I bank on the natural ingredients that I use. I have used onion fry and caramalized the sugar to bring the desired colour but after 1.5 hours the colour hasn’t come.

This time, I wanted that typical dark brown colour to mutton kasa, a favourite dish among Bengalis, Oriyas and Biharis. You can eat mutton kasa with rice or paratha or plain chapathi. Mutton kasa is one of the mouth watering dishes in eastern India and is offered during parties and special occasions at home. It occupies a place in the menu list in weddings, birthdays, etc.
