Winter is the season for vegetable. Though the weather is gloomy, what brings happiness to us is the colourful vegetables. A bowl full of turnip, beetroot and carrot makes a wonderful healthy soup.

All red and no greens! Add sliced beans.

Boil water and add chopped vegetables like turnip, carrot and beetroot in it. Add some onions and garlic pieces.

Finally, add some salt, coriander leaves and sliced green chillies.

But where is the protein punch. Break an egg and make a swift omlette and dip it in the soup. I love this combination.
