
Muli-gobi paratha
Chop cauliflower and radish. Add turmeric and salt to it.
Take a deep frying pan and pour some oil in it. Add jeera, dhania in it. Then add the vegetables, salt, turmeric and green chillies. Cover and cook.
Once the vegetables are soft leave it to cool.
Then put the cooked vegetables in the blender and mash it. Then add this mashed vegetables to the wheat flour and make a dough. Make small balls and roll it in round shaped flat bread and fry it in oil or ghee.
Kadi and pakora
Take besan in a bowl. Add salt and turmeric and beat it well till it becomes fluffy. Then, heat oil in a pan and drop the batter mixture in small quantities. It will inflate like a dumpling. Put these dumplings in water and immediately pick it up and keep it aside.
Now take curd in a pan and beat it to make a smooth creamy liquid. Add two to three spoonful of besan in water and mix it thoroughly. Then add this to the curd micture. Then add more water to it it. Add salt and turmeric.
Now put this pan over the flame and let the curd mixture cook over LOW FLAME. When the liquid reduces to three fourth of the original quantity, and a layer starts forming, it is done.
Now, heat oil in pan. When the oil is heated, add some curry leaves, kasoori methi, jeera, dhania, chopped garlic, red chilli and hing in a pan. Once the jeera starts spluttering, remove it from the oven and add it to the kadi. Add the pakora to the kadi and cook for 10 more minutes.
