
Procedure:
To make Uttapam batter, you must soak urad dal overnight. We used urad dad with skin.
Soak equal quantity of rice also.
Next day morning, you have to put the rice in a blender and make a thick paste. Then grind urad dal into a paste.
Now blend both. And keep it aside to ferment. By afternoon, it will rise to double height. The time depends on the place you live. Warmer climates will allow fermentation easily.
Once the mixture has risen with a lot of bubble, add salt.
Now take a flat iron pan. Heat the pan and add some oil. When the oil is absorbed by the iron tawa, sprinkle some water and and allow the water to evaporate. Then pour the batter and spread it. This needs practice.
When the cake is cooked add onions and green chillies in top and then when the cake leaves the pan turn it over. And add some oil to cook the top part of the cake.

Green chutney:
Slice onion, green chillies, coriander leaves, ginger and tomatoes and put it all in the blending jar. Make a paste. It will be liquidy. Put it in a bowl and add salt. The chutney is ready. You can squeeze lemon juice on it.
